Ingredients

  • 2 tablespoons vegetable oil
  • 1 bay leaf
  • 1 packet Sweet 'N Low zero calorie sweetener
  • 1/4 teaspoon salt
  • 1 cup cooked brown rice
  • 1 1/2 cups fresh or frozen flaked crabmeat
  • 1 can (2 pounds) whole tomatoes
  • 1/4 cup diced green pepper
  • 1/2 cup sliced mushrooms
  • 1/2 cup thinly sliced carrot
  • 1/2 cup sliced onion
  • 1 cup sliced celery
  • 1/2 cup (2 ounces) grated sharp Cheddar cheese

Preparation

Preheat oven to 350F. Heat oil in dutch oven or other oven proof container. Saut, celery, onion, carrots, mushrooms, and green pepper until onion is transparent. Add remaining ingredients, except cheese. Let simmer 5 minutes. Remove bay leaf. Sprinkle with cheese. Bake 20 minutes.
