In a blender, puree strawberries until smooth. Press puree through a fine mesh strainer using a silicone spatula. Stir Sweet’N Low into puree.
To a cocktail shaker add vodka, lemon, and mint. Muddle until lemon and mint are crushed. Fill shaker halfway with crushed ice and add the strawberry puree. Cover and shake until well-chilled, about 15 seconds. Strain into two chilled cocktail glasses, top with a splash of sparkling water and garnish each glass with a strawberry and a mint sprig.
